Salted Caramel Slice ~~

A fond memory growing up is of mum always mixing up sweet treats, bowl on hip and stirring like mad. A couple of hours later there would be date loaf, chocolate chippie biscuits, mint slice and muffins ready for us to devour straight out the oven. Thanks mum for establishing my serious sweet tooth….I now share that love for baking. There is just something so simple and satisfying about combining ingredients to make something so delicious and sharing it with loved ones. This is a slice you probably shouldn’t make more than once a year. I made it for my birthday weekend away and the containers came back empty. It is dangerous and you were warned.

A recipe from the NZ queen Chelsea Winter (seriously her recipes can do no wrong) is this indulgent Salted Caramel Cashew Slice. It has everything you could ever want…On the bottom a light coconut base, followed by a layer of creamy cashews, then a thick layer of salted caramel gooey goodness and topped off with dark chocolate icing and sea salt flakes. I substituted the plain flour with gluten-free flour 1:1 so my friends could taste this sensation, otherwise I would have eaten it all on my own and that’s not something I would have been proud of.
