This cupcake could also be named ‘Death by Chocolate’ – it is everything I love in one little morsel of goodness; spongy soft chocolate cake, Whittaker’s dark Ghana icing, m&ms and white chocolate coated Oreo cookies. I originally made these for my housemate as she needed cheering up and we all know chocolate stimulates the production of endorphins, which in turn boosts your mood. I used 72% dark chocolate; as it is full of flavonoids that act as antioxidants in defending cells from free radical damage and helps to protect your skin. As if I need any other reasons to get my mixing bowls out! I dropped off a bunch to my mechanics as they were working on my car that day. They were pretty chuffed and asked why I wasn’t married…..#canbake
Yes this is another one of my favourite cook’s recipes; Chelsea Winter can do no wrong in the sweets department. Her recipes are so incredibly easy to follow and she always gives handy tips along the way. Just a warning; you will be tempted to lick the spoon, and the bowl, numerous times. You can be as adventurous as you like with your toppings from changing up the icing, to adding sprinkles, lollies, fresh fruit or simply keeping them bare and letting the delectable cake have it’s glory.
